Here is a way to cook your eggs that will change your life. You will need:

1 small non-stick skillet
1 glass lid for said non-stick skillet
2 eggs (do yourself a favor and get eggs from cage-free, vegetarian-fed chickens)

Warm the skillet over medium heat. No hotter. Add a small amount of butter or olive oil. Let it warm up.

Crack your eggs into a separate bowl (so you can fish out any shells if needed) and pour them into the skillet. Wash your hands, season the eggs with salt & pepper, then put the lid on.

Watch as your eggs fry from underneath while steaming on top. You can get your desired level of yolk runniness without flipping the egg.

Over medium is my favorite way to enjoy eggs but I always get it wrong. and I will NOT eat eggs with over cooked yolk. So half the time I over cook it end up eating the egg white and throwing away the yolk.

I also dislike over easy. So I end up making scrambled all the time since it's the only way I can make eggs without screwing it up.

I'll go away and scramble some eggs for breakfast. Or cook an omelette. With bacon and cheddar. Or put over hard eggs on top of juicy burger. Those eggs don't even have pepper. *shakes head*

If I want eggs like that I'll kill somebody I hate, go to prison, and get some free for breakfast with a box of juice.

Huevos al la Mexicana is the way to go...

think scrambled eggs, but with finely shredded smoked ham, cilantro, a little bit of diced onion, and maybe finely diced jalapeno if you're adventurous. It's basically a scrambled omelette, no cheese.

To enhance them eggs, I recommend a coarse ground black pepper mixed with cayenne (they sell this as a mixture in the stores)

The coarse ground is still fine but not as fine as normal pepper but you don't get the chunks like fresh ground.
